Sweet and luscious fresh peaches cooked together with melt in your mouth buttery pastry “crumble”, what more could a girl want eh? Well plenty if I’m being honest but let’s not allow the truth to get in the way of this peach crumble bars intro!

You’d never believe it but the hardest part of creating this recipe was the bloody name! I was inspired to make this recipe because of a book I was reading at the time, the storyline included ladies in a book club about murders happening around their small quaint town…trust me it was a great story but anyway at one point they are having a meeting (in a bookshop ironically) and eating these delicious sounding peach pie bites.

So obviously that was the original name of the recipe and honestly I still prefer it and if this was a cookbook I would name it as such but apparently no one Googles that.

Anyway, back to the recipe part of this article! This type of peach recipe is the perfect example of how simple taste can be exquisite, baking with peaches is such an almost nostril flaring delicious experience. I have a love affair with stone fruit recipes they are some of the most rewarding recipes you can make in your home.

You can substitute your favorite fruit or whatever you have on hand into these crumble bars. Some great substitutions would be:

  • Nectarines

  • Plums (um YUM can you imagine???)

  • Apricots

  • Cherries

  • Most berries

So basically anything you can put into a fruit pie you can get away with subbing into this recipe.

Tips for Perfect Peach Crumble Bars:

  • Do my peaches need to be ripe to bake with?

    Absolutely, the juice content of the peaches will be higher when they are ripe which will bake down into a more delicious peach layer.

  • Do I need to remove the peach skin?

    Not in my peach crumble bars recipe! You can if that is your preference but personally I leave the peach skins on.

  • Can I use room temperature or melted butter?

    No, your butter needs to be extremely cold. The extra cold butter rubbed into the dry ingredients will give you that buttery flakey almost pie pastry for your peach crumble bars.

  • How do I store my peach crumble bars?

    Once cooled and sliced, place them in a airtight container and in a refrigerator for 2-3 days.

Gorgeously fresh peaches encased in a buttery pastry that comes out perfect everytime!

Ingredients

Peach Crumble Bars
  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • Pinch of salt
  • 2 tablespoons white sugar
  • 1 cup unsalted butter, cold & cubed
  • 1/2 teaspoon white vinegar
  • 3-4 cups fresh ripe peaches, chopped
  • 1 teaspoon vanilla essence

Instructions

Peach Crumble Bars
  1. Preheat oven to 380F fan bake. Grease a 9.5-inch x 9.5-inch brownie pan. Set aside.
  2. In a large mixing bowl add flour, baking soda, salt, and sugar. Stir till evenly combined.
  3. Add your butter and rub it into the dry ingredients using the tips of your fingers. 2 - 4 minutes. Done when the texture is sandy and you still have a small amount of almond size lumps of butter.
  4. Add your vinegar to the crumble mixture and stir with a spoon.
  5. Press 3/4 of your crumble mixture into the base of your brownie dish, using your fingers or a flat bottom glass or bowl to compress the base.
  6. Layer your fresh peaches over the bottom of your crumble base. Drizzle vanilla essence over the peaches.
  7. Sprinkle the last 1/4 of your crumble mixture over the top of your peach.
  8. Place in your preheated oven for approximately 30 minutes (times may vary by oven) or when the crumble base is cooked through and the peaches are soft. Remove from oven.
  9. Leave in the brownie tin to cool completely and then slice into bars (into whatever size is your preference).
  10. Enjoy! x
